Vegan Baked "Feta" Pasta

You've probably seen the baked feta trend that is going around social media, so I thought why not do a version that is plant based and has some hemp in it! 
I know you can buy vegan feta, but I thought I would make my own which turned out pretty tasty. This recipe is rather simple and you can easily switch up the flavours or add in other vegetables. 

Ingredients

For the 'feta' 

1 block of silken tofu

1/4 cup melted coconut oil (this helps it set)

1/2 cup Pure Delight Hemp Seeds

1 tablespoon garlic powder

1 tablespoon onion powder

1 garlic clove

salt and pepper to taste

 

Other ingredients 

spaghetti (or any pasta) 

cherry tomatoes

2-4 cloves of garlic

2 tablespoons olive oil

1 tablespoon of dried herbs (I used basil)

salt and pepper to taste 

Directions

To make the feta, blend all the ingredients together until it forms a smooth consistency. Pour into a container and set in the fridge for 1-2 hours. Or if you're impatient like me, you can use it straight away. Place your tomatoes and garlic in an over safe dish, be sure to make space in the middle for your feta. Place as much or as little of the feta in as you like, then drizzle with olive oil, and sprinkle with salt, pepper and dried herbs. Cook in the oven at 200°C for 20-30minutes or until the cheese is golden and the tomatoes look roasted. While this is in the oven, cook your pasta. Once out of the oven, mash it all up and toss through your pasta. You could even add some spinach or fresh herbs to it before serving.
