I want to share with you my all time favourite green pesto. Its super easy to make and is so delicious you will be wanting to eat it for breakfast, lunch and dinner. I'm pretty sure I actually did that one day in fact.
This sauce is amazing on everything. . Any type of pasta, zucchini noodles, rice noodles, on some simple steamed veg. Or even a little on a Bagel (I really like bagels and try out everything on them). The best thing about this pesto is that it is packed full of Kale and hulled hemp seeds. All the green goodness, essential fats and protein.
Ingredients:200g of fresh kale ( or just a whole bunch is usually what I go with)
1/2 cup of Pure Delight Hemp Hulled Hemp Seeds
125g Walnuts (dry fried)
1/2 Cup of nutritional yeast
2-3 cloves of garlic
1 cup of water ( keep the water you use to boil the kale and use that)
1/4 cup olive oil
3 tbs lemon juice or apple cider vinegar
Salt and pepper to taste
1/4 cup of Basil or to taste
Method:
First you will need to boil your Kale. Only cook it until it is just soft. We want to keep it nice and green.
While you are boiling the kale you can dry fry your walnuts. Just toast them in a pan until the turn a little brown.
Next you will need a blender or a food processor. Put all your ingredients into the blender except for the water. Only put half of the water in to begin with.
Blend on a high speed until your pesto is pretty combined.Then add the rest of your water and blend on high for a couple of minutes. Blending the pesto for a few minutes makes it extra smooth and almost creamy.
You may want to put more or less water in depending on how thick you want the pesto to be.
Don't forget to taste it and adjust salt and pepper or what ever else you think might go well in there.
I'm always adding new herbs or different spices.
