Looking for a new favourite summer salad?
This quinoa and Hemp seed salad hit the spot for Sunday lunch.
Lots of protein and yummy green things 😍
To make you will need:
1 Sliced cucumber
1.5 Cup of cherry tomatoes
1 Cup of finely chopped fresh herbs of choice ( I used parsley, coriander and green onions)
2 Cups of cooked quinoa
1/2 cup of Hulled Hemp Seeds
1 Tin of chickpeas (and spices for seasoning. . . Paprika, lemon juice, salt , pepper. . What ever you like really)
1 tsp Dijon mustard
3 tbs lemon juice
3 tbs olive oil
1 tbs soy sauce
Salt and pepper to taste
First prepare your chickpeas. Put them either in a fry pan or the oven with some olive oil and seasonings. Let them cook until the brown up and get a little crunchy.
Next in a big bowl mix together all your vegetables and quinoa. Add your herbs Hulled Hemp seeds and cooked chickpeas. Mix all the ingredients well then add your dressing.
Simple to make and deliciously packed full of plant based proteins. 🌱
