Vegan Roast Vegetable Tart

A sneaky way to get in that extra protein and fibre! 

This recipe can be made into one large tart or a number of single serve tarts, as I have done. If you are feeling extra creative you could even make your own short crust pastry. But with busy lives, sometimes store bought is the way to go. 

The inside of the tart is deliciously creamy and with the added hemp seeds, it makes this dish even more nutritious. 

Ingredients

  • short crust pastry (approx. 2-3 sheets, amount depends on the size of the tart tins and how many you make)

Filling: 

  • 1 tin cannellini beans, drained
  • 3 shallots 
  • 2-4 cloves garlic 
  • 1/2 cup Pure Delight Hemp Seeds
  • 1 Tablespoon fresh or dried thyme 
  • salt and pepper to taste

Toppings: 

  • 1 zucchini, sliced on a diagonal
  • 1 red capsicum, deseeded and sliced 
  • 1 yellow capsicum, deseeded and sliced
  • 1 Tablespoon fresh or dried thyme
  • salt and pepper to taste
  • 1 Tablespoon olive oil

Method

First you will need to preheat the oven to 200C.

To prepare the toppings, lay the vegetables onto a baking tray, drizzle with oil and sprinkle with thyme and salt and pepper. Roast in the oven for 20-30 minutes until cooked through and browned. 

While those are roasting, prepare the pastry by pressing the sheets into the tart tins. To blind bake, line the top of the pastry with grease proof paper and fill with baking beans (if you don't have baking beans you can use rice or dried legumes). Blind bake for about 10-15 minutes and then bake for an extra 5-10 minutes without the paper and baking beans. 

To prepare the filling, fry off the shallots until soft then add the garlic and thyme. Sauté until browned. Transfer them into a food processor (or high speed blender) along with the beans, hemp seeds and salt and pepper. Blend until smooth. 

To assemble, spoon the filling into the tarts, making sure not to overfill them. Then place the roasted vegetables on top and place in the oven for 10-15 minutes or until it has warmed through. Let sit for 2-5 minutes before removing from tins. Sprinkle some hemp seeds on top then serve warm with a salad of your choice.
