Rice Noodle Salad with Peanut Sauce

1 packet of rice noodles

1/4 red cabbage, shredded 

2 carrots, julienned

2 capsicum, julienned 

handful of coriander, chopped 



1/4 cup sweet chilli sauce 

2 tablespoons soy sauce 

1/4 cup Pure Delight Hemp Oil 

1/4 cup peanut butter 

1 clove garlic

2 teaspoons minced ginger 

juice of a lime 

1-2 tablespoons water 



cook noodles according to packet, drain and cool. To make dressing, blend all ingredients in a blender or food processor until combined and creamy. Add half of the dressing to the cooked noodles and toss until coated.

Add your chopped veggies to the noodles and add the rest of your sauce. serve with fresh lime, chopped peanuts and fresh herbs. 

This salad is delicious as is but for a more filling meal, add a protein of choice.
