If you're a pear and ginger fan like me, you'll love these!

These vegan muffins are so easy to make and taste so delicious. The hemp seeds not only pack these muffins with omegas, protein and a range of vitamins and minerals but they add to the texture and flavour with their nutty composition.

Yum!

1/2 cup Pure Delight Hemp Seeds

1 Tablespoon baking powder

1 Tablespoon ground ginger

2 Teaspoons ground cinnamon

1 Teaspoon ground nutmeg

1/2 cup chopped walnuts

1 tin pear slices, drained and chopped

1/4 cup brown sugar

1/4 cup oil

1/4 cup apple sauce

1/4 cup soaked dates

1/4 cup almond milk (or any milk)

1 Tablespoon vanilla essence

Method

In a blender, add the brown sugar, apple sauce, dates, milk, vanilla essence and blend until all ingredients form a smooth and runny consistency.

In a mixing bowl, add your flour, hemp seeds, baking powder, spices and walnuts then mix until combined.

Then pour the wet mixture into the dry and mix until almost combined. When the mixture is almost combined, add the pear and continue to mix.

Line your muffin tray then spoon the mixture into muffin trays. sprinkle some extra hemp seeds on top before putting them in the over at 180°C for 20-25 minutes or until golden brown and cooked through.
