Peanut Protein Brownie Balls (Vegan Friendly)

Posted by Tatiana Crichton on

¼ cup Desiccated coconut
½ cup Coco Powder
1 Cup Pure Delight Hemp Protein Powder (or you can substitute with our Hemp Flour)
2 Tablespoons of stevia (Or sweetener of your choice)
6 tbs of almond milk
½ Cup of Peanut Butter
1 tbs Vanilla essence
Chocolate outer
½ cup coconut oil
1/3 cup cocoa powder
1tbs stevia (or to your taste)

For the brownie balls mix all the ingredients but the milk in a food processor or just in a bowl with a wooden spoon and some elbow grease.  Mix until it comes together and gradually add in the almond milk as you go along. Depending on the ingredients you have used, you may need to add a splash more of milk or a bit more protein. The mixture should stick together easily when pressed without being overly sticky.
Using a tablespoon of mix, Roll the dough between your hands and form individual balls.
Set all the finished ones to the side in a lined container or pan then pop into the fridge while you prepare the chocolate.
Melt down your coconut oil and mix in stevia and cocoa powder. Mix well until it’s a smooth chocolatey sauce.
Then dip your brownie balls into the chocolate with a toothpick. Once fairly well coated put back onto lined pan and then put them in the fridge to harden.
