Hulled hemp seed and macadamia caramel slice

What a treat these are! They a a little more time consuming that a lot of my other recipes but well and truly worth the extra effort.

Ingredients:

Base
1/2 cup of almonds
1/2 cup of desiccated coconut 
1/2 cup of dates
1 tbs maple syrup ( or sticky sweetener of choice)


Caramel layer
1/2 cup macadamia nuts (soaked for at least a half hour) 
1/2 cup of Pure Delight Hemp Hulled Hemp Seeds
1 tbs of peanut butter (or nut butter of your choice) 
2 tbs maple syrup ( or sticky sweetener of choice)
1/2 tsp vanilla essence
Pinch of salt
1 tbs coconut oil

1/3 cup of melted Chocolate for the top. You can make your own with some coconut oil a few tablespoons of cacao powder and some sweetener.

Method :

First line a tray with baking paper. Then put your almonds and desiccated coconut into a food processor and break them down into fine pieces. Next add your dates and maple syrup. Blend the mix until it comes together. 
Press evenly into the lined tray.

Next drain the macadamia nuts and place them into a blender. Add all your remaining ingredients and blend the mixture until its smooth and creamy. 
Pour the creamy mixture onto the base.

Then pour on your melted Chocolate. 
You can sprinkle some chopped nuts or seeds on the melted chocolate for a finishing touch.

Put it in the freezer for at least 30 minutes to firm it up. Then its time to slice it up and eat asap. Best to keep it in the fridge or freezer.

Watch it disappear as the whole family will want second and third helpings.
