Hemp Seed Butter Cups

A hemp seed version of peanut butter cups! 

These small bites of heaven a great for an afternoon pick-me-up, an after dinner treat or even sharing with friends. Dairy-free and nut-free, these delicious Hemp Seed Butter Cups are a vegan alternative that are high in protein. 

Ingredients

Hemp Seed Butter:

  • 1 cup Pure Delight Hemp Seeds

Chocolate:

  • 1/2 cup coconut oil
  • 1/3 cup maple syrup (adjust for your desired sweetness) 
  • 1/2 cup cacao powder (or cocoa powder) 
  • pinch of salt 

Method

To make the hemp seed butter, add the cup of Pure Delight Hemp seeds to a food processor and blend for 5 minutes or until a silky smooth paste forms. 

To make the chocolate, heat up the coconut oil and maple syrup in a saucepan until the oil has melted. Add the cacao power and salt and stir until glossy.

To assemble the Hemp Seed Butter Cups, use a mini muffin tray or small muffin liners and carefully pour enough chocolate to line the base and sides of the moulds. Place the moulds in the freezer for about 5 minutes to set the chocolate before adding a spoonful of the hemp seed butter. Cover the butter in more of the chocolate, sprinkle hemp seeds over the top and put back in the freezer to set for around 5-10 minutes. Once set, take out of moulds and serve. 

This should make up to 10-12 mini cups and can be kept in the fridge for 1-2 weeks or freezer for up to a month.

Any left over Hemp Seed Butter can be kept in the fridge and used as a butter alternative.
