Ingredients:
2 cups all purpose flour1/2 cup hemp protien (or Hemp Flour)
3 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
½ teaspoon nutmeg
1 teaspoon salt
1/4 cup currants
1/4 cup dates
1/4 cup nuts of your choice (I used cashews)
2 medium bananas mashed
1 cup almond milk
2 teaspoons vanilla
1 cup cane sugar
½ cup (melted) coconut or hemp oil
2 cups grated carrots,
Loosly packed
Method:
Preheat the oven to 180°C and grease a 9x13 baking pan.
In a large bowl, whisk together the flour, hemp protein, baking powder, baking soda, cinnamon, nutmeg and salt.
In a separate bowl, whisk together the mashed banana, almond milk, vanilla, sugar and oil.
Mix the dry ingredients into the bowl with the wet ingredients.
Fold in the carrots, nuts, currants and dates then stir until just combined.
Bake for 30 to 40 minutes or until a toothpick inserted comes out clean.
