Hemp and Miso Dressing

This dressing is packed with umami flavour that it will elevate anything you add it to! It goes great with this simple noodle bowl of soba noodles and roasted veg. 



1/2 cup Pure Delight Hemp Seeds 

1 tablespoon miso paste 

2 tablespoons tahini 

1 tablespoon lemon juice 

1/4 cup water 


Noodle bowl:

soba noodles

1 head of broccoli, chopped into florets 

200g brussel sprouts, halved

1 tablespoon olive oil 

salt and pepper to taste 

sesame seeds for garnish 



Coat the broccoli and brussel sprouts in olive oil and salt and pepper then roast for 30 minutes or until crispy at 200°C. Meanwhile, cook your soba noodles and set aside. To make the dressing, blend all the ingredients together until it forms a smooth and runny consistency. When the veggies are cooked, add them to a bowl with the noodles and top with the hemp dressing and sesame seeds.
